White Pepper

White Kampot Pepper

White pepper is the core of the peppercorn. To obtain it, pepper is soaked in water, which makes the peppercorns lose their shell. After that, it is dried. Common white pepper sold in supermarkets is often obtained from unripe peppercorns – a procedure that saves time and money.

Black pepper is unripe, green pepper which is sun-dried after its harvest, resulting in the peppercorns obtaining their black color. It's intense but balanced aroma goes perfectly with red meat or sauces.

Red Kampot Pepper

Red pepper is completely ripe pepper, which develops a unique sweet and fruity taste. It is due to the ripening process, which forms a layer of fruit sugar around the peppercorn. Real red pepper is rare because the ripe peppercorns are very sensitive, which makes harvesting and drying more labour-intensive.
